In this Meiji Shrine tour, we often take photos in front of the Japanese Sake barrels. Japanese sake is an alcohol and made from rice and water. It is used in ceremonies of Japanese religion Shinto to connect with deities, so sake plays an important role in Shinto.
In our group, we talked about when sake brewing usually starts. The timing depends on the brewer, but it is common to start brewing sake in winter. This is because the cold winter weather slows the fermentation process, making the flavor richer. Also, late August to September is the season for newly harvested rice (in the Kanto region), so in winter that rice can be used for sake brewing. There is no clear definition of ‘shinshu’ (new sake), but generally the season for it is from December to March.
